Do you know the Caracolillo bean?
It is a physiological defect of the bean. It is discovered when you pulp the cherry and the bean remains closed in a round shape. It is a small bean, so if a coffee tree gives many caracolillos, it is an indication that it is low yielding. The snail frequents the cherries at the tips of the branches and it is estimated that between two and ten percent of cherries contain snails. However, roasters began to see these beans as special because of their uniform roast, good aroma and very concentrated flavor.
