What's a Peaberry or Caracolillo bean?
It is a physiological defect of the bean. It is discovered when you pulp the cherry and the grain remains closed in a round shape. It is a small bean, so if a coffee tree bears a lot of snails, it is an indication that it is underperforming. The snail frequents cherries found at the tips of the branches and it is estimated that between two and ten percent of cherries contain snail. However, roasters began to see these beans as special due to their uniformity in roasting, good aroma and highly concentrated flavor.
